Royal cuisine demonstration – Part 1

Food as cooked within royal kitchens has a true blue fable to tell. When Royal Fables went to Ahmedabad for the first time, guests got treated to a live cookery demo by two royals , known for their cookery expertise. At the  the inaugural lunch  hosted for the Spousal Wing of  Entrepreneur’s Organisation,Ahmadabad, Kitchen of The Kings by Royal Fables invited Princess Vaishnavi Kumari of Kishangarh and Nawab Kazim Ali Khan Rampur who rustled up two interesting dishes namely: a besan ka achaar, a family recipe being carried out from generation to generation in the Kishangarh home and  the famous Mutton tarkari from Rampur which was cooked with soya bean chops for the vegetarian loving Gujaratis.



We line up for your kitchen the recipe of besan ka achaar for you to follow at home.

Besan Ka Achaar

Besan – 500gms

Red Chilli powder – 2 tsp

Meetha Soda – ¼ tsp

Salt – 1 ½ tsp

Fennel – 1½ tsp

Sabudana- 1 ½ tsp

Jeera – ½ tsp

Garam Masala – ½ tsp

Hing – ¼ tsp

Moyan to bind

Garlic paste – 50 gms

Lemon juice – 1 cup

Add dry masala to the besan. Half besan is cooked in oil and add it to some amount of besan, which is not cooked/, roasted. Add garlic paste and lemon juice and mix well. Make small round balls out of it.

Sabut Garam masala – 50gms

Chilli Powder – 1 tsp

Salt to taste

Fennel – 1 tsp

Jeera – ½ tsp

Garlic Paste – 100 gms

Fry the above ingredients in deep oil and add the balls to it.
